I am going to be using the workout player a bit more now that winter is looming but have noticed that the mileage travelled is roughly half what I would expect for a similar wattage outside. I note that there is a wheel circumference setting, but I have a wheel off trainer, so what should it be set at?

IIRC, some trainers report linear speed directly (in m/s) while some other trainers report the rotational velocity (rpm) and expect the software to do some calculations to determine the speed based on wheel/tire size, etc.
IMO, I would recommend using the Xert EBC app for indoor training. For indoor rides using the Speed from Power setting, Xert will estimate your speed/distance based on your power output, rather than the speed of the trainer. This is recommended since the wheel speed of your trainer doesn’t necessarily correspond with your effort in ERG mode.
e.g. I could be doing an easy endurance workout at 100 W, but if I were to be riding in my 53/11 gear, the trainer speed would be far greater than I would ever expect to go at 100 W.
