I’ve always heard that you should maintain some intensity during taper week—to stay sharp, keep the nervous system primed, etc.—but I don’t see any intensity in the week leading up to my Granfondo. Is that normal, please?

Your max cycling hours are highly restricted due to your tri schedule so taper week shows even more rest days to lower those hours. You likely don’t need to do that.
Consider bumping up the midweek HIT duration and adding a short opener workout the day before the event.
Search the Workout Library for “opener” and pick one of the five entries that best matches the event profile.

I didn’t set any day-specific limits, just time limits, but of course I’ll go over the allotted time with my event (makes sense, right?), so why isn’t there any intensity in the 25-minute midweek session?
Didn’t you mention your cycling hrs/week are capped to accommodate your other training?
Status stars count and weekly hours indicate TL is around 30-35.
At that level I don’t think much of a taper is necessary depending on what your other training is.
The mid-week entry is HIT but I doubt there is a HIT workout in the Library that short.
Either bump duration to 45-60 minutes before selection or see what Autogen comes up with.
If concerned about retaining an edge for the event I suggest riding an opener of your choice the day before.
