You can certainly set your availability as unavailable on your planner (click on the clock symbol for a given day), don’t think you can say you’re sick though.

No. That wouldn’t matter. You could just ignore the training advice for a few days.
How I would personally handle it would be to take a few days, as needed & not really worry about the training recommendations too much. If possible, I try to free-ride very easy for ~30 min just to stay active.
Then the first couple of day(s) back on the bike, I’d probably just free-ride nice and easy for 30-60 minutes, based on RPE. Once I start to feel better, then I’d consider adapting the plan again (or looking at recommendations from the ATA, if I wasn’t using a Forecast AI plan).
