When going through the planner to set my availability I find it a bit of an annoyance to have to remember to uncheck the “Default for weekday” setting. Wouldn’t it be more useful if is this is set to off by default?

Absolutely. The dialog is opened by clicking on a specific date, so the setting should be for that date.
The question is how should one access the defaults?
By flipping the switch at the bottom that is already there. I agree, it would be more intuitive to have it disabled by default when opening the modal.
